Pilau Rice Recipe

Create delicious restaurant style pilau rice using this recipe.

Just add

• 1 tablespoon vegetable oil OR ghee
• 400ml water

Instructions

1. Wash rice until water runs clear.
2. Add rice, 400ml water, whole spices and 1 tbsp vegetable oil OR ghee to a pan.
3. Boil on high heat until water is fully absorbed.
4. Reduce heat, stir and seal with a tight-fitting lid (use cling film or foil under the lid to trap steam).
5. Cook on very low heat for 10 mins.
6. Test a grain by squashing between your fingers - it should be soft, not gritty. If
   needed, add 2-3 tbsp water, cover and cook a few more minutes.
7. Remove from heat, keep lid on for 10 mins, then fluff with a fork before serving.

To Make Coloured Pilau Rice

Pilau rice is sometimes coloured, the colour makes no difference to the taste and is purely for decoration.

For multi-coloured pilau rice: Dilute small amounts of red, green, and yellow food colouring in water. Add a few drops to the rice after removing it from heat. Let it rest for 10 minutes, then fluff and mix with a fork.

For yellow pilau rice: Add half a teaspoon of turmeric powder in step 2.
